Squeeze the lime halves collecting the juice in a bowl

Bring the 3 cups of water to a boil and add the already squeezed lime's and sugar.

Smash the lemongrass stalk with the side of a knife and tear open with your fingers to expose the scent and flavor of the lemongrass.
Step 4
Place the lemongrass into the pot with the limes and gently stir. Let sit for at least 15 minutes.
Step 5
Pass the lime syrup through a sieve directly into the fresh squeezed lime juice and stir.
Step 6
Add a handful of ice cubes to the mixture and store in the refrigerator until cool.
Step 7
To serve, fill a glass with ice cubes and top up with the lime juice.
Step 8
Add a garnish of a few more sliced limes and a lemongrass straw if desired.
