Step 1
Place 1 lb chicken breast fillets in a zip top baggie (if your chicken breasts are thick, you'll want to slice them through the middle for thinner fillets). Add 2 tbsp olive oil, 1/4 cup lemon juice, 1 tbsp freshly minced garlic, 2 tbsp dried oregano, 1/2 tsp kosher salt, and 1/4 tsp black pepper to the bag with the chicken. Close the zipper top bag and check to make sure it is secure so nothing leaks out. Massage the bag to mix all the ingredients together and coat the chicken. Place the bag in the fridge to marinate the chicken until ready to use. Marinate at least 15 minutes and up to 8 hours
Step 2
When ready to cook the chicken, heat a cast iron skillet over mid-high heat. Remove the chicken from the marinade and carefully place the chicken into the hot skillet. Discard marinade.
Step 3
Sear chicken for about 5 minutes until a nice crust forms on the one side. Flip chicken over and add a tablespoon of butter to the skillet. Sear chicken for 5 more minutes while basting with butter. Chicken is done when the internal temperature is 165°F and no longer pink inside. Check temperature in thickest part of chicken breast using an instant read thermometer. When chicken is fully cooked, remove the chicken to a cutting board to rest for about 5 minutes.
Step 4
Shred the chicken into tiny pieces for topping the pizza.
Step 5
Combine 5 ounces Greek yogurt with 2 tbsps grated cucumber, 1/2 tsp freshly minced garlic, 1/2 tsp olive oil, 1/2 - 1 tbsp fresh dill, 1/2 tbsp of fresh lemon juice, 1/4 tsp kosher salt and an 1/8 tsp black pepper.
Step 6
Mix well. For a smoother salad dressing, process in a blender or food processor until smooth. Give the tzatziki dressing a taste and adjust the flavors as needed.

Preheat oven to 400° F and line a baking sheet with parchment paper
Step 8
Place pita bread on parchment lined baking sheet in a single layer. In a small bowl, combine 3 tablespoons olive oil, 1/4 to 1/2 tsp salt and 1/2 tsp dried oregano. Brush the mixture on to one side of each pita bread.
Step 9
Bake in preheated oven for 10 minutes until lightly toasted. Remove from oven and set aside until ready to use.
Step 10
Top each toasted pita pizza with 2 tablespoons mozzarella cheese, about 5 cucumber slices, 1/8 cup tomatoes, 2 tbsp diced green peppers, 2 tbsp red onion, 2 Kalamata olives, 2 tbsp crumbled Feta cheese, and about 2 tbsp of shredded marinated Greek chicken. Put another 2 tablespoons of mozzarella cheese on top and bake the pizzas in the oven for about 10 minutes or until the cheese is melted nicely. Serve with Tzatziki Sauce and enjoy!
