Step 1
Melt butter in a large saucepan over a low heat.

Stir butter and biscuits together.
Step 3
Place the biscuits into a 23 cm pie or flan dish, covering the bottom and the sides.

Chill in fridge for about 15 minutes.

Preheat oven to 180C.

Finely grate the peel and squeeze the juice from the lime.

Separate the eggs, putting the yoke in a medium size bowl and the whites in a large bowl.

Beat the condensed milk and egg yolks together and stir in the grated lime peel and juice.

Pour the egg yolk mixture over the chilled biscuit base and bake in the over for 15-20 minutes or until set.
Step 10
Whip the egg whites until stiff.
Step 11
Add the sugar slowly to the eggs, until stiff peaks form.
Step 12
Spread meringue topping onto the lime pie, return it to the oven and bake for 8-10 minutes until surface is golden.
Step 13
Cool and serve in slices.
