Step 1
To prepare limoncello pudding, place 2 cups of milk in a saucepan with the peel of one lemon and bring it to a boil.
Step 2
Beat the egg yolks together with the granulated sugar and the rice flour, then strain the milk into the mixture; place everything back over the heat and cook for 2-3 minutes after it comes to a boil. Remove from the heat and add in 2 tablespoons of limoncello.
Step 3
Place the pudding in a bowl and add a few tablespoons of limoncello on top. Seal the bowl with plastic wrap and let it chill.
Step 4
Mix 1 cup of milk with a tablespoon of powdered sugar, a tablespoon of limoncello, and some lemon zest. Briefly dunk the ladyfingers in the mixture, then place them in bowls; distribute the pudding on top and finish with white chocolate shavings.
Step 5
Place them in the fridge for 10 minutes, then serve.
