This is 7-layer black bean dip simplified: just heat and season refried beans, then top with fresh vegetables for a texturally exciting dip.

Loaded Black Bean Dip

(15 ounce) can reduced-sodium refried black beans

lime juice

garlic, grated

chili powder

cumin

salt

avocado,

tomato

red onion

cotija cheese or queso fresco

jalapeño

cilantro

Combine beans, lime juice, garlic, chili powder, cumin and salt in a shallow bowl. Microwave on High until heated through, about 1 minute. Spread the mixture into an even layer and top with avocado, tomato, onion, cheese, pickled jalape&ntilde;o and cilantro.


It was delicious! I thought I'd miss the sour cream but I didn't. I did swap the cojita &amp; fresca cheeses for shredded cheddar.

Such a quick and healthy dish!  I made it three times before I realized the recipe actually calls for a "can of black refried beans" not "can of black beans!" But it was still yummy with just plain black beans!  When I make this dish I put half the beans in a container and half in the dish.  Then I divide the lime juice and spices between the two, saving the container to make the dip again in the next couple of days.  Making just half the recipe is still more than I can eat in one sitting but it is enough to make a healthy meal.

I'm not gonna lie--this dip makes an amazing dinner.

Really good!  Family devoured it.  I did not put the onions or pickled jalapeno on it but we loved it!
