Step 1
Heat a skillet over medium heat, spray with olive oil and add in onion and bell pepper. Cook for 5 minutes, until the veggies start to soften.
Step 2
Add in the garlic and cook for 1 minute, then move the vegetables to a bowl and return the pan to the heat.
Step 3
Whisk the 4 eggs in a medium bowl, spray the pan with olive oil, and add the eggs to the pan.
Step 4
Scramble the eggs until just set, then remove from the heat.
Step 5
To each tortilla add eggs, 1/8 cup of cheese, veggies (and optional meat) and cilantro.
Step 6
Roll up the breakfast burritos, and serve hot.
