Cook turkey bacon in a large skillet over medium-high heat for about 6-7 minutes until cooked through. Let cool, then cut slices in half.
Meanwhile, prepare veggies, dividing everything up among 4 large salad bowls. Mix ingredients under the dressing heading together and set aside.
