Step 1
Heat a skillet over medium heat and add chopped bacon.
Step 2
Cook for about 5 minutes until crispy and remove from the skillet to a paper towel-lined plate.
Step 3
In the same pan, saute the beef cubes until browned on all sides.
Step 4
Remove the beef cubes and set them aside with the bacon.
Step 5
Add red wine vinegar and a small amount of beef broth to deglaze the pan, being sure to scrape up all of the bacon bits from the bottom of the skillet.
Step 6
Transfer liquid into your slow cooker along with the beef, bacon, rest of the beef broth, onion, garlic, carrot, tomato paste, diced tomatoes (with juice), salt and pepper, and herbs.
Step 7
Cover and cook on low for 4- 5 hours or on high for 2- 3 hours.
Step 8
Taste and adjust seasoning before serving.
