Air Fry the Hash Brown Potatoes

Preheat air fryer to 400°F.

Toss cubed hash browns in 1-2 tsp oil with a pinch of salt and pepper.

Air fry for 15-18 minutes, shaking halfway through, until golden and crispy. Set aside to cool.

Cook the Bacon and Sausage

Chop bacon into bite-size pieces. Cook in a large skillet over medium heat until crispy, about 8-10 minutes. Transfer to paper towels to drain.

In the same skillet, cook the sausage, crumbling it as it browns, until fully cooked through (6-8 minutes). Drain off excess grease.

Sauté the Vegetables

In the same pan, sauté diced red pepper, orange pepper, and onion for 5-6 minutes until soft and lightly caramelized. Season with a little salt and pepper.

Scramble the Eggs

In the same pan you used for the vegetables, add in the eggs and scramble them until they are cooked. (be careful not to overcook the eggs)

In a large mixing bowl, combine the cooled scambled eggs, air-fried hash browns, cooked bacon, sausage, sautéed vegetables, and hot sauce. Stir to mix well. Let it cool slightly.

Taste and adjust seasoning if needed.

Assemble the Burritos

Lay out one tortilla at a time. Add about 3/4 cup of the filling to the center of each tortilla. Sprinkle with 2-3 tablespoons of shredded cheese.

Optional: add a bit of fresh chopped cilantro.

Fold in the sides, then roll tightly from the bottom into a burrito.

Wrap each burrito tightly in a double layer of heavy-duty aluminum foil, folding ends to seal.

Label each burrito with contents and the date.

Lay wrapped burritos flat in a single layer on a baking sheet and freeze for 1–2 hours. Then transfer to a freezer-safe container or gallon-size freezer bag. Burritos will keep for up to 3 months.
