Step 1
Place the flour, salt, water and sourdough into the large bowl of a stand mixer, fitted with the paddle attachment.
Step 2
With the speed on low, incorporate all ingredients. Increase speed and mix until a dough is formed.
Step 3
Cover the bowl with plastic wrap and let sit on the counter overnight.
Step 4
In the morning, punch down the dough and divide into six equal pieces. Form each piece into a ball and place onto a baking sheet that has been covered with parchment or a silicone mat.
Step 5
Sprinkle with flour, cover with a warm damp towel and let rise for another 1 1/2 - 2 hrs., until puffy.
Step 6
Using a sharp knife, make a slash in each roll, spray with water and bake in a preheated 425* oven for 20-25 minutes, until golden brown and hollow sounding when tapped.
