Name: Mango-Jalape&ntilde;o Slaw
Ingredients: ¼ cup thinly diagonally sliced green onions; 1 tablespoon rice vinegar; ¼ teaspoon kosher salt; ¼ teaspoon freshly ground black pepper; 1 (10-oz.) pkg. angel hair coleslaw; 1 jalapeño, seeded and finely chopped; 1 small ripe mango, peeled and thinly sliced

Serve this fruity slaw on the side, or pile it onto your burrito bowl for more texture. Buying pre-shredded coleslaw saves you time better spent cooking.

Combine all ingredients in a large bowl; toss well to coat. Let stand 10 minutes before serving.


I think CL has better slaw recipes.  We really like Tequila Slaw with Lime and Cilantro (August 2013).  But this was ok and went well with our veggie burrito bowls.

I made this for 2 of us and of course it was way too much. It is very simple and after letting it sit a while all the flavors melded together.
