Step 1
In a food processor fitted with an “S” blade, process the oats into a flour-like consistency. Add the dates and process until a ball forms. Then add the lime juice and zest. If it is too wet, add a few more oats until the proper consistency is reached. Press into the bottom of a tart pan with a removable bottom.
Step 2
In a high-powered blender, combine all of the ingredients (but not the optional toppings) and blend until smooth. Pour the filling over the crust.
Step 3
Sprinkle on any optional toppings, then cover and refrigerate for several hours to allow the filling to firm up before slicing, serving, and enjoying.
