Step 1
Preheat the oven to 350 degrees F.
Step 2
Cook the manicotti shells based on the package instructions and then rinse them with cold water.
Step 3
In a medium size mixing bowl, mix together the ricotta cheese, grated parmesan cheese, half of the shredded mozzarella cheese, chopped spinach, egg, Italian seasoning, salt and pepper until combined.
Step 4
Place the cheese mixture in a piping bag or ziplock bag with the corner of the bag cut off.
Step 5
Pour a thin layer of the marinara sauce into the bottom of a 9X13 baking dish.
Step 6
Pipe approximately 3-4 tablespoons of the cheese mixture into each manicotti shell and layer them into a single layer in the baking dish.
Step 7
Pour the remaining marinara sauce on top of the shell and sprinkle the remaining mozzarella cheese on top.
Step 8
Bake for 20-25 minutes until the filling is heated through, sauce is bubbling and cheese is melted.
Step 9
Serve warm and enjoy!
