Step 1
Preheat the oven to 425ºF. Place sliced peaches on a baking sheet (I use parchment to keep them from sticking, but it’s not necessary). Drizzle peaches with coconut oil, maple syrup, and cinnamon. Toss to coat.
Step 2
Bake for 20–25 minutes, or until peaches are tender and sweetener has caramelized, flipping halfway through.
Step 3
Serve peaches on ice cream, pancakes, yogurt, or oatmeal! They’re also excellent by themselves with some {coconut} whipped cream!
