Step 1
Preheat the oven to 425ºF.
Step 2
While the oven is preheating slice the butternut squash in half lengthwise, and scoop out the seeds.
Step 3
Place flesh side down on a prepared baking sheet, and bake for 40 minutes, or until softened.
Step 4
While the squash is cooling, finely chop a tablespoon of fresh herbs.
Step 5
Once cool enough to handle, scoop out the flesh into a medium bowl. Add the remaining ingredients, and mix together with a hand masher.
Step 6
You’re ready to serve along side your favorite main dish.
