Step 1
Add the cauliflower to a small stockpot filled with 2 inches of water. Bring the water to a boil and steam the cauliflower until tender, about 10 minutes.
Step 2
Add the butter to a small sauté pan over medium heat. Add the leeks and sauté for 2 - 3 minutes.
Step 3
Add the steamed cauliflower to the bowl of the food processor fitted with the steel blade. Process for 30 seconds.
Step 4
Add the leeks, Roasted Garlic Base and Parmesan cheese to the food processor and pulse for 30 seconds more.
Step 5
Remove the mash from the food processor and serve immediately.
