Step 1

Combine the mashed potato, beaten egg, flour, cheese and chopped onion in a bowl. If the mixture is too wet, add more flour until it comes together in a thick 'dough'.

Step 3

Add some extra flour onto a plate. Form large spoonfuls of mixture into balls and coat both side with flour, patting them down to form a thick 'pancake'.

Step 5

Cover the bottom of a fry pan in olive oil and warm over a moderately high heat. Once the oil is hot, fry the potato pancake over a medium heat, for 2-3 minutes each side, or until each side is crispy and golden brown.
