Step 1

Heat oil in slow cooker or a pan on the stove. Saute onion and chili pepper until beginning to soften. Add the garlic and spices, saute about 30 seconds. Add the remaining ingredients. Note, adjust liquid as desired, dals can be thin or thick. Also the freshness of your dried lentils will determine the cooking time.

Step 2

Slow Cooker: Optionally, bring lentils to a boil. Cover and cook on LOW for about 2-5 hours, or until lentils are soft.

Step 3

Stove: If cooking on the stove, add more liquid (2 cups). Bring the lentils to a boil, then lower the heat to a gentle simmer. Cook for about 20 to 30 minutes, or until lentils are soft.

Step 4

Adjust seasoning and liquid as needed. Serve with rice, naan, or toasted bread. Garnish with chopped cilantro.
