In a mixing bowl, break the matzo into 1-inch pieces. Bring the water to a boil and pour over the matzos. Quickly toss the matzo, then drain off any excess. In a bowl, beat the eggs with a fork. Mix the eggs, salt and pepper into the matzo. Over high heat, heat the butter and oil in a large saute pan. Add the matzo and fry until crisp. Flip over to fry the other side, breaking into pieces as it cooks. Serve with Maple syrup, or preserves.

Great simple recipe for matzoh brei-- works with all kinds of matzoh so you can make it savory (everything matzoh) or sweet (egg matzoh). Trick is to get it crisp without burning it! 

Easy to do and better than some I have tried.  The dish is both crispy on the outside and tender within.  Excellent!

I like matza Brie the good old fashioned way. Fry pancake style turn over chop up finish cooking and Add syrup. Although salami and onions pancake style adds a lot of yummy flavor also.  I always add more scrambled eggs for texture and flavor. Which brings me back to good sweet syrup. Matzo Brie can be either sweet or savory. It depends on the region of the country your family is from and what traditions you were raised with. My mother's family was from New Hampshire. So they put maple syrup on theirs. My father's family put salt and pepper on theirs. In my home, we change it up. 

Maple syrup? Preserves? Matzo brei is savory, not sweet. You can certainly add onions and even hot peppers, but not syrup. It may be interesting but it isn't matzo brei anymore.

this is a good recipe, however it is not traditional. To make it traditional you should use chicken fat instead of butter.

the longer you soak the matza the softer it will soak the egg up and become softer when cooking. You can put anything you want on it during Passover we used to make hamburger helper with matza instead of noodles and it was real good, you can use any meat you want or fish or veggies.

This recipe is really good.  I kicked it up a little bit by adding chopped up Salami.  Just fry the salami in the butter and oil for 2 minutes prior to adding the matzo mixture.  YUM!<br /><br />This breakfast is easy and the whole family loves it.<br /><br />-D

It could use a little more flavor.  I have had this dish at a few deli's and they add saute onions.  The second time I prepared this recipe I did add them and it was more flavorful
