Step 1

Preheat a griddle or frying pan over medium heat.

Step 2

Whisk all ingredients in a large mixing bowl. Combine well until there are no lumps, but don’t over mix.

Step 3

Add ½ tbsp butter to the hot griddle or pan. Scoop ⅓ cup of batter and fry it in butter. Wait until the edges rise away from the pan and the bubbles begin to pop before flipping and cooking the other side for 60 seconds. Repeat and cook all the batter.

Step 4

Serve hot with maple and butter or any of the optional toppings listed above in the post text.
