1 Preheat oven to 375 degrees.

2 Heat brown rice packet according to package directions.

Step 3

3 In a large mixing bowl, add the chicken, beans, enchilada sauce, tomatoes & green chilies, brown rice, half of the cheese and salt, then stir until well combined.

4 Spray mini aluminum mini loaf pans with non-stick cooking spray. Divide the mixture evenly among the four loaf pans.

Step 5

5 Bake for 20 minutes at 375 degrees. Once removed from the oven, sprinkle with the remaining cheese and chopped cilantro.

Step 6

6 If using for meal prep, then allow the casseroles to cool completely before covering with the lid or with aluminum foil and storing in the refrigerator.

Step 7

7 Enjoy with additional toppings such as salsa, avocado, hot sauce, sour cream, etc.
