Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.

Step 2

Place the salmon fillets on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and season with minced garlic, dried oregano, dried basil, paprika, salt, and pepper. Rub the seasonings onto the salmon to ensure even distribution.

Step 3

In a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Add the sliced zucchini and bell peppers to the skillet and sauté for about 5-7 minutes, until the vegetables are tender and slightly golden.

Step 4

Arrange the sautéed zucchini and bell peppers in a single layer on the baking sheet around the salmon fillets.

Step 5

Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Step 6

Once cooked, remove the baking sheet from the oven. Serve the Mediterranean Baked Salmon over the bed of zucchini and bell peppers. Squeeze fresh lemon juice over the salmon before serving and garnish with rosemary if desired.
