Preheat oven to 400 degrees.

Line a baking sheet with foil and spray it with cooking spray.

In a large bowl, add the pork, panko, egg, parsley, onion, garlic, lemon juice and zest, and feta. Mix together, and season with salt and pepper, oregano, and a pinch of red pepper flakes. I find that it's easiest to use your hands to mix everything together! Once you mix together, if you think the mixture needs more seasoning - add.
Step 4
Roll into 1 tablespoon-sized meatballs and place on the prepared baking sheet. Bake for approximately 12-15 minutes or until golden brown.
Step 5
While the meatballs are baking, assemble the rest of your bowls. Add your base to the bowl (grain/greens), and arrange the vegetables and feta over top. Once the meatballs are cooked and cooled - add those to the bowl.
Step 6
Drizzle olive oil over the top of everything, and add a pinch of pepper and salt. Serve with a side of tzatziki sauce!
