Step 1
Cook the rice according to package instructions.
Step 2
While the rice is cooking, prepare the beans. For canned beans, first drain the liquid and rinse the beans. Place the beans in a saucepan and add enough water just to cover the beans.
Step 3
Cook the beans over medium heat. Bring to a boil and then cook for about 5 minutes. Set to the side. If you're using a 16oz can of beans, you'll be using half the can for this recipe.
Step 4
Prepare the corn. If you're using frozen corn, simply place it in the microwave and cook per package instructions.
Step 5
Combine all of your ingredients into a bowl. Combine the brown rice, black beans, cherry tomatoes, sliced avocado, and corn into a big round bowl.
Step 6
Top it off with your favorite dressing. A few tablespoons of guacamole, lime juice, or hummus.
