Step 1
Wash & rinse rice. Add to a hot pan with 2 tbsp of oil. Toast for 2-3 minutes.- 1 cup long grain white rice- 2 tbs cooking oil
Step 2
Add in the onion, jalapeño (cut slits in the jalapeño for more flavor). Toast for another 5-7 minutes OR until the rice is lightly golden.- ½ onion- 1 jalapeño
Step 3
To 2 cups of water, mix in the tomato sauce & tomato bouillon, add to the rice & mix. Grate in 3 garlic cloves & squeeze in one lime juice stir in.- 1 can (8 oz) tomato sauce- 1 tbs tomato bouillon- 3 cloves garlic- 1 lime
Step 4
Bring to a boil, once boiling, cover with a lid & reduce the heat to low. Cook for 15 minutes, then turn off heat. Let the rice sit COVERED for at least another 15 minutes before serving.
