Warm the sugar in a large microwave-safe bowl on High/ 800watts/100% for 4-5 minutes.
Step 2
Place the strawberry, water, lemon juice and 1 reserved lemon half in a large microwave-safe bowl. Cook on High/800watts/100% for 5 minutes or until the strawberry is soft (you should still have chunks of fruit in the mixture).
Step 3
Add the warm sugar to the fruit mixture and stir until well combined. Cook on High/800watts/100% for 20-25 minutes or until the jam reaches setting point. Set aside for 3 minutes or until bubbles subside.
Step 4
Ladle hot jam through a funnel into clean, dry jars and seal. Invert for 2 minutes, then turn jars upright. Set aside to cool. Label, date and store in a cool, dark place away from direct sunlight until ready to use.
