Step 1
Place a thermal serving bowl or other large bowl onto mixing bowl lid and weigh couscous into it. Cover with boiling water and set aside.
Step 2
Place coriander, mint and lemon zest into mixing bowl and chop 5 sec/speed 7. Transfer into a bowl and set aside.
Step 3
Place oil, onion, ginger, garlic, chilli, cumin, cinnamon and turmeric into mixing bowl and chop 3 sec/speed 7.
Step 4
Scrape down sides of mixing bowl with spatula and sauté 2 min/120°C/speed 2.
Step 5
Rinse and drain couscous well using Varoma dish. Add salt and remaining 1 tablespoon oil and stir to combine. Add tomatoes, stock paste, chicken and currants (optional) into mixing bowl. Place Varoma into position with couscous, secure Varoma lid and cook 20 min/100°C//speed 1.
Step 6
Stir couscous with a fork to separate grains. Divide couscous between serving bowls, then top with chicken and garnish with reserved herb mixture to serve.
