Step 1

Slice potatoes & toss with 1 tbls extra virgin olive oil, 1 tsp of @mingleseasoning Spicy Mexican Seasoning.

Step 2

Roast sweet potatoes until golden (air fryer or oven baked at 180 degrees C).

Step 3

Brown onion & garlic in a large non-stick pan until golden.

Step 4

Add mince &@mingleseasoning Spicy Mexican seasoning. Cook until mince is cooked through. Set aside.

Step 5

Boil corn cob, then once ready, cut corn kernels & set aside.Preheat grill.

Step 6

Layer sweet potatoes into a baking tray.

Step 7

Top with black beans, mince, corn, tomato, jalapeños & cheese.

Step 8

Grill until cheese is melted.Serve with a dollop of salsa & yogurt (optional).
