Step 1
Place half the spinach in a microwave-safe bowl. Microwave on High for 2 minutes, tossing halfway through, or until wilted. Transfer to a plate. Repeat with the remaining spinach.
Step 2
Combine the butter and oil in a bowl. Place a sheet of bread on a work surface. Brush with butter mixture, right to the edges. Turn and brush the other side. Cut into quarters. Place a small flat pile of spinach in the centre of each bread square and lightly crumble some of the feta over the top.
Step 3
Fold the corners of the bread in to meet in the centre over the filling, overlapping slightly. Hold the centre and brush surface with butter mixture. Press to seal and place seam-side down in a large frying pan. Repeat with 3 more pieces of bread.
Step 4
Place the frying pan over medium heat. Cook for 2-3 minutes or until golden. Brush with butter mixture. Turn and cook a further 2-3 minutes. Use a spatula to transfer to a wire rack. Repeat with the remaining bread, filling and butter mixture.
Step 5
Serve with lemon wedges.
