Step 1

Preheat oven to 350˚F and spray pans with cooking spray.

Step 2

In a large bowl, whisk together the dry ingredients, set aside.

Step 3

In a small bowl, whisk together the milk, lemon juice and lemon extract. Set aside.

Step 4

In a large bowl with an electric mixer *affiliate link, cream shortening, sugar and lemon zest at a medium speed until light and fluffy, about 2 minutes.

Step 5

Add eggs, one at a time, beating until incorporated.

Step 6

Add both dry flour mixture and milk mixture, alternating between each.

Step 7

Divide the batter equally between cake molds.

Step 8

Bake for 20 – 25 minutes, or until an inserted toothpick comes out clean.

Step 9

Remove from oven and let cool completely before removing cakes from pan.

Step 10

In a medium bowl, whisk together frosting ingredients.

Step 11

When cakes have cooled, drizzle with frosting.
