Minions Themed Cupcakes

Step 1

Prepare vanilla cupcakes according to box’s directions and allow to cool completely.

Step 2

Using an electric mixer, beat butter, icing sugar and milk on medium and gradually increase the speed to high. These ingredients will make up your buttercream. It is ready once the ingredients are well-combined, smooth, and form stiff peaks. Add blue gel food coloring and mix until completely tinted.

Step 3

Frost each cupcake with your buttercream.

Step 4

Line a baking sheet with wax paper. Microwave candy melts and coconut oil in 30-second intervals or, until completely melted.

Step 5

Dip each lady finger cookie half into melted candy. Coat completely and gently lay flat on lined baking sheet. Add 1 or 2 candy eyes on each coated cookie. Allow to set.

Step 6

Draw “goggles” around your Minions’ eyes with the white frosting. With a paintbrush, gently dab the silver food dust on the “googles.” With the black frosting, draw hair for your Minions. Insert each Minion into cupcake and enjoy!
