1 In a small nonreactive saucepan over medium-high heat, heat the honey, water, and lemon juice and zest until the mixture reaches a low boil

2 Remove from the heat and let cool to room temperature

3 Stir in the mint leaves, then cover the saucepan and refrigerate for up to 4 hours

4 Strain the mixture into a jar or another lidded storage container; discard the solids

5 Cover and refrigerate until needed

6 To serve, measure 1 tablespoon of syrup into a glass and add 1 cup of sparkling water

7 Stir to combine

8 Add ice, if desired

9 Taste, and add syrup or sparkling water, as needed
