Step 1
Simply mix the miso paste with the water until soft and pliable then add the sesame seeds and mix together.
Step 2
Pat dry the tuna steaks with some kitchen towel and then lightly season with salt and pepper on both sides.
Step 3
With a spoon, scoop 1 tablespoon of sesame miso paste spread on the top side and bottom side of the tuna to just 2mm thickness covering it all over. Don’t be tempted to put more on, as it needs to stay stuck onto the tuna, Do the same with the other tuna steak.
Step 4
Heat a frying pan until smoking hot and add the olive oil.
Step 5
Using tongs, add the tuna to the hot pan and sear for 30 seconds on both sides, then lifting it out of the pan before the miso burns.
Step 6
Leave to rest for 5 minutes whilst you make the dipping sauce.
Step 7
Thinly slice the tuna so that you have thin slithers of tuna for dipping.
Step 8
Serve with a crunchy salad or slaw. (I served it with a fennel and apple slaw.)
