In a pan, heat oil, add cumin, ginger, garlic, and chopped onion, and cook until soft. Add mixed veggies and potatoes, cover, and cook for 5 minutes or until half cooked.

Step 2

Add salt, turmeric, and red chili powder, cook until fragrant, then add tomato puree, and cook until oil separates.

Step 3

Again, cover and cook for 5 to 8 minutes (at low heat) or until veggies get tender; no need to add water. Garnish with fresh coriander leaves.
