Step 1
Add walnuts to a food processor and grind until the mixture is sticky to the touch.
Step 2
Add the maca powder to the ground walnuts and pulse until well combined.
Step 3
Next add the dates but make sure the pits are taken out first. If you dates are not soft add them to a small bowl and cover with warm water and let them soak for a few minutes. Reserve water and make sure to dry them off and then put them in the food processor. You might need the water if the dough is too dry.
Step 4
Pulse until they have broken down completely. Then add the cocoa poweder and pulse until combined with the rest of the ingredients. It should look like cookie dough but maybe a bit drier. Take some out and roll into a bowl. If it's too dry add a tablespoon or two of the reserved date water and process again.
Step 5
Use a tablespoon or cookie scoop to portion out the dough and roll into a ball with your hands. Store in an airtight container or ziplock bag in the refrigerator.
Step 6
To store in the freezer, place on a plate and freeze for 1 hour to harden. Then place them in a ziplock bag in the freezer. They will stay soft enough to eat right out of the freezer and will keep longer.
