These minty mojito mocktails would be great at a luncheon, a brunch, a baby shower, a pool party--basically whenever you find that a cool, refreshing beverage would be welcome. Be sure to add the ice cubes and sparkling water just before serving to avoid diluting this pitcher cocktail (which is easily doubled to serve a crowd, by the way).

Mojito Mocktails

lime juice (from 6 limes)

simple syrup (see Tip)

mint leaves

lime zest

ice cubes

sparkling water

Lime slices and mint sprigs,

Combine lime juice, simple syrup, mint leaves and lime zest in a pitcher; using the handle of a long wooden spoon, lightly crush the mint and zest. Add ice cubes and sparkling water; stir to mix well. Divide among 4 glasses; garnish with lime slices and mint sprigs, if desired.


When I was pregnant, I drank mojito mocktails whenever I would long for an alcoholic beverage. This recipe is excellent, but substituting some ginger beer for the sparkling water enhances the flavor.
