Step 1
Using a hand mixer or stand mixer on medium speed, cream together butter and both sugars.
Step 2
Add in egg and vanilla and mix for a full two minutes.
Step 3
Mix in peanut butter, then add in flour, and baking soda..
Step 4
Add in the quick oats. Once well mixed, stir in chocolate chips and m&ms.
Step 5
Drop by rounded tablespoons onto cookie sheet. Optional - add a few extra m&m's on top of each cookie.
Step 6
Bake at 350 degrees for 10 - 12 minutes.
