Step 1
Cut the mozzarella into 4 slices and drain. Spread the slices on paper towels to dry.
Step 2
Place one mozzarella slice on four of the bread slices. Top with the remaining slices and press the sandwich edges so that they stick together well.
Step 3
Heat the oil in a heavy bottomed frying pan until boiling around 350°F.
Step 4
Pour 1” cold water into a shallow dish and the flour in another.
Step 5
Dip the four edges of each sandwich in the flour, holding them tightly closed to prevent opening. Then dip the edges briefly in the cold water; this will form a protective layer to prevent the mozzarella from leaking out while cooking.
Step 6
Beat the eggs with a pinch of salt. Dip the sandwiches in the egg mixture, one at a time, and let soak for 2 minutes on each side, allowing the bread to absorb a good amount of liquid.
Step 7
Fry the mozzarella sandwiches until they are golden and crisp, turning often for 5-7 minutes.
Step 8
Drain on paper towels and eat while hot.
