Step 1
Place a large heavy-bottomed pot over medium heat and add enough vegetable oil to rise 4 inches in the pot.
Step 2
In a large bowl, add rice, parmesan, salt, pepper, and the egg. Mix well until everything is fully incorporated.
Step 3
Take a large ice cream scoop, and scoop some of the mixture. Add in one cube of mozzarella cheese and firmly press the mixture into the scoop. This can also be done by hand but make sure to squeeze the mixture really well until it comes together.
Step 4
Dip each ball in the breadcrumbs, shaking off any excess.
Step 5
Once the oil reaches 375ºF, add a few rice balls and fry them until golden brown.
Step 6
Remove on a plate lined with a paper towel. Add salt and pepper (to taste) immediately after they come out of the hot oil.
