Step 1

Grease a quiche dish and line with puff pastry.

Step 2

Mix together the bacon, onion, eggs and spinach/zucchini (and anything else you want to pop in).

Step 3

Pour into pie dish.

sprinkle the cream cheese cubes over the mixture.

Step 5

Cook in mod/hot oven (around 200 degrees celsius) for about 20 minutes.

Step 6

Remove from oven and put a puff pastry lid on top of the pie, paint a mixture of egg/milk on top of the lid and continue cooking until puffed and brown.

Step 8

This is a fantastic dish to serve for a ladies luncheon with a green salad topped with Di's Poppy Seed Salad Dressing.
