Step 1
Preheat oven to 200C/180C fan forced. Grease twelve 80ml (1/3 cup) muffin pans.
Step 2
Place biscuits in a food processor and process until fine crumbs. Spoon 1 tsp biscuit crumbs into each pan (reserve remaining crumbs). Tilt to coat pans with crumbs. Shake to remove any excess crumbs.
Step 3
Whisk together milk and eggs in a large bowl. Add cheddar, flour, baking powder, salt, half of the parmesan and half of the remaining biscuit crumbs and stir until just combined.
Step 4
Divide mixture among pans. Top with remaining parmesan and remaining biscuit crumbs. Bake for 20 minutes or until golden. Set aside in pan for 5 minutes to cool slightly before turning onto a serving plate. Serve warm.
