Step 1
First, preheat a skillet over medium heat.

Season the meat with salt and pepper to taste. Cook the meat in a drizzle of olive oil in the skillet until it is cooked to your desired level of doneness (about 4 to 5 minutes, no longer pink). Allow the meat to rest for a few minutes, then thinly slice it.
Step 3
Heat a separate skillet or griddle over medium heat and add a small amount of olive oil.
Step 4
Place one tortilla on the skillet and sprinkle a small amount of cheese on top. Add a few slices of the cooked meat, followed by some chopped onion and cilantro. Top with an additional sprinkle of cheese.
Step 5
Place another tortilla on top to create a sandwich-like structure. Press down gently with a spatula to seal the ingredients together.
Step 6
Cook the mulita for a few minutes on each side until the tortillas are slightly crispy and the cheese is melted. Repeat this process with the remaining tortillas and filling ingredients.
Step 7
Once cooked, remove them from the skillet and let them cool for a minute or two. Cut in half.
Step 8
Serve the mulitas with salsa or guacamole for dipping or drizzling. They can be enjoyed as a main course or as a tasty appetizer.
