Step 1
Heap the cheese in and on top of each potato and season well with the paprika, salt and pepper. Place the potatoes onto a baking tray and stick them in the oven for 1 1/2 hours, until soft all the way through.
Step 2
Preheat the oven to 210ºC. Slice the potatoes into 5mm slices, almost down to the bottom so that they are all held together. Force the slices of butter in between the potato slices.
Step 3
Place the bacon onto a lined baking tray and cook in the oven for the last 10 minutes, until crisp. Remove the potatoes from the oven and pile on more cheese along with a dollop of creme fraiche and a couple of rashers of bacon. Let everything melt for a minute, then plate up. Slice the spring onions and scatter over the plate to finish serves 4
