First, add your turkey neck(s) to a medium-sized pot.
Fill the pot almost to the top with water ensuring that the turkey neck is fully covered with water.
Cook over medium heat for approximately one hour.
After one hour, in a separate large pan, add olive oil and heat to medium heat.
Then add the onions and saute until they start to brown.
Once the onions begin to brown, add the minced garlic to the pan.
Next, add the peas to the pan and then the smoked turkey neck.
Pour the water from the smoked turkey neck into your pan.
Season the peas with the onion powder and cajun seasoning mixing together.
Cover and cook over medium heat for 45 minutes to an hour. (If needed, add additional water throughout the cooking process.)
