Step 1

In a small bowl or large liquid measuring cup, combine milk and pudding mix. Whisk to dissolve.

Add sugar (or sweetener) and vanilla extract, whisking to combine.

Step 3

Add cottage cheese and mix to incorporate.

Step 4

Transfer mixture to a Ninja Creami pint, being careful to not exceed the max fill line, and close the lid. Place on a level surface in your freezer and freeze for at least 24 hours.

Step 5

Remove pint from freezer and take off lid. Place pint into outer bowl apparatus and secure the lid. Place outer bowl into the Ninja Creami machine and use the Ice Cream function to process.

Step 6

Remove pint and check texture of ice cream. If it's crumbly, return it to the machine and use the Re-spin function. If it's still crumbly, add 1 TBSP milk and Re-spin again.

Step 7

Optional: If adding a mix-in, create a well in the center of the pint that's about 1/2-inch wide and extends to the bottom of the pint. Add your mix-in of choice to the well and place the pint back into the machine. Use the Mix-in function to incorporate.
