Step 1

In a medium bowl, combine the almond butter, honey, coconut oil, and vanilla extract. Stir until smooth. Pour the wet ingredients over the dry ingredients and stir until well combined. Stir in the dried blueberries.
Step 3
Roll the mixture into small balls. Store the energy bites in the refrigerator for up to 2 weeks.
Step 4
Note-if your almond butter is too thick, you can heat the wet ingredients together in the microwave for about 20 seconds to make them easier to stir. Use gluten-free oats if you need the recipe to be gluten-free.
