Step 1
In a large pot over medium-low heat melt the butter, and the peanut butter. Add in the 10 oz of the mini marshmallows, stirring constantly until fully melted. Remove from heat.
Step 2
Stir in the cornflakes until fully coated. Mix in the rest of the mini marshmallows (1oz) and the optional peanut butter chips and gently fold to combine. Don't overmix.
Step 3
Spray a large cookie scooper with nonstick cooking spray and scoop out 10 equally sized peanut butter cornflakes balls onto a parchment-lined baking sheet. Grease your fingers and gently spread the cookies to about 1 inch in thickness. Don't pack them so they aren't too dense.
Step 4
Melt the peanut butter chips and oil in the microwave in 30-second increments mixing in between every time. Pour the mixture n a ziplock bag and cut a small opening in the top of the bag and top each cookie with some peanut butter drizzle.
Step 5
Let set for 20-30 minutes before serving.
