Step 1
In a large bowl, whisk together flour, yeast and salt.
Step 2
Add water and stir until well combined.
Step 3
Cover with plastic wrap and let stand at room temperature for at least 3 hours.
Step 4
Flour work surface and turn out dough. Add extra flour to dough as needed to work and avoid sticking.
Step 5
Using a pastry scraper, fold dough over on itself until a rough ball is formed.
Step 6
Line a bowl with parchment paper and transfer dough to bowl.
Step 7
Cover with a dish towel.
Step 8
Place covered dutch oven in oven and set to 450.
Step 9
When oven (and dutch oven) are up to temperature, transfer parchment paper and dough to dutch oven.
Step 10
Cover and cook in oven for 30 minutes.
Step 11
Uncover, remove parchment paper and return to oven uncovered until golden brown (about 10 minutes).
Step 12
Remove from dutch oven and place on wire rack to cool.
