Place the fennel seed in a plastic bag and pound them a few times so they are lightly crushed (or put on a cutting board and finely chop with a sharp knife).

Put all ingredients except the ground meat in a small bowl and stir until well mixed.

Sprinkle the seasoning mix on the ground meat and mix well. Cover and place in the refrigerator overnight before cooking.
Step 4
To freeze: make into patties, separate each patty with plastic wrap or freezer paper, and freeze in a freezer bag.
Step 5
To cook: Form the sausage into thin patties or break into chunks. Cook in a medium-high skillet until cooked through with no pink remaining.
