Heat oven to 350 degrees. In a large bowl, cream brown sugar and butter until well combined. Stir in vanilla and egg and mix until light and fluffy. Stir in rolled oats, whole wheat flour, baking soda and fold in chocolate chips. Onto a cookie sheet covered with a Silpat mat or foil, drop the dough by rounded tablespoons (you can also use an ice cream scooper) about 2 inches apart.Bake 10-12 minutes or until golden brown. Cool slightly; remove from cookie sheet to a wire rack.
